1 large egg
1/2 c almond butter (no stir)
1/2 cup light brown sugar, lightly packed*
1 teaspoon baking soda
1 cup semi-sweet chips (or 1/2 milk and 1/2 semi-sweet chocolate chips)
Add ins: 1/2 c honey roasted peanuts, 1/4 c toffee chips, 1/2 c walnuts, or any other yummy treats that you might like
These cookies are so easy to make but a few pointers. Don’t heat or warm the almond butter. If there is oil on top of your almond butter, be sure to stir it to incorporate the oil into the almond butter. I used no stir almond butter.
Combine the ingredients very well and start scooping. I would make the cookies a little smaller than you might normally make. They are a little more fragile than normal chocolate chip cookies BUT totally worth it. I baked mine for 12-13 minutes but they were a little bigger.
* I ran out of brown sugar so I used 1/4 c brown sugar and 1/4 c coconut palm sugar and it was delicious!
